MIXED SALAD WITH HONEY-MUSTARD DRESSING
Preparation time 25 minutes
Fry the onions in some of the olive oil. When the onions are translucent, add the sliced peppers. Roast both in the pan with a little salt, pepper and brown sugar.
In the meantime, wash the lettuce, then cut the carrots into slices and the cherry tomatoes into quarters. The onion/pepper mixture can cool down a little in the meantime so that the lettuce doesn't fall apart when you mix it together. Now you can roast the pine nuts in a small pan on a medium heat.
Now mix the rest of the olive oil with the mustard, the sambal oelek, the vinegar, the honey and the herbs - season the dressing well with salt and pepper. When the seeds are golden brown and smell pleasant, they can be added to the salad with the onions and peppers - pour the dressing over them and mix well.

nB Salad of your choice (e.g. lamb's lettuce)
2 large onions
1 bell pepper
6 cherry tomatoes
3 carrots
1 tbsp olive oil
1 handful of pine nuts or a nut mixture
1 tsp mustard, medium hot
6 cl balsamic vinegar, red or white
1 tsp honey
½ tsp sambal oelek
½ tsp sugar, brown
salt and pepper
Herbs, mixed (e.g. 8 herb mixture)
